Nantucket's Morning Glory Cafe, owned by Pam McKinstry, created the original morning glory muffin containing grated carrots and apples, raisins, pecans, shredded coconut, and a hefty dose of cinnamon, all loosely held together by a fairly conventional American muffin batter.
We can do that! With a couple of tweaks, we can recreate this glorious muffin - and make it totally allergy-friendly using our Cinnawin Spice Cake & Muffin Mix. With these ingredients too, it will be as nutritive as you can get!
WHAT YOU WILL NEED:
- eat GANGSTER Cinnawin Spice Cake & Muffin Mix
- 6 TBSPS Coconut or Avocado Oil
- 3/4 cup Water
- 2 tsp Apple Cider Vinegar
- 3 TBSPS finely chopped Apples
- 3 TBSPS shredded Carrots
- 3 TBSPS Raisins
- 2 TBSPS shredded Coconut
***If your body tolerates nuts & seeds, consider adding 1-2 TBSPs Pumpkin Seeds, Walnuts and/or Pecans!
DIRECTIONS:
1) Preheat oven to 350F
2) Mix together your eat GANGSTER Cinnawin Spice Cake & Muffin Mix with add-ins as directed on back of pouch.
3) Once combined, add your Apples, Carrots, Raisins and Coconut (add any other nuts or seeds at this step as well!)
4) Spoon into 12 muffin tins, using liners if desired.
5) Bake 20-22 minutes.
6) Remove from oven, allow to cool and enjoy!
