AIP / Allergy-Friendly Mini Pineapple Upside Down Cakes

Its not often we get to work with award winning restaurants to develop a dessert recipe (or three!), but when we do, we savor every last bite!

The below recipe was developed by Pastry Chef, Savannah Foltz, of Supperland in Charlotte, NC.  She crafted a 100% AIP, allergy-friendly dessert board for a recent event, and this morsel was a part of it!  The other 2 desserts on the board included: Key Lime Thumbprints and Raspberry Brownie Bites.

neapple Upside Down Cakes

Cake (1 package yields 16 cakes)

  • 1 package Eat Gangster Cinnawin Spice Cake Mix
  • 6 tablespoons coconut oil, melted
  • ¾ c warm water
  • 2 teaspoons apple cider vinegar

Date Caramel (yields enough for 2 packages)

  • 15 dates, pitted
  • 1/2c coconut milk
  • ¼ teaspoon cinnamon
  • ½ teaspoon sea salt (maldon)

Pineapple Upsidedown Part

  • mini pineapple rings (see below for instructions)
  • pitted sweet dark cherries

Mini Pineapple Rings (this yields tons of scrap to save for other projects!)

  • Using a set of ring cutters (we prefer Atteco brand), measure the perfect size for the inside of your muffin tin - this will be your outer cut. Also grab the smallest cutter in the set - this will be your center cut.
  • Remove the top and bottom from a pineapple, but no need to trim off the skins.
  • Slice the pineapple (top to bottom, large slices, skipping the core) into ¼-½” thick slices.
  • Use your larger ring cutter to cut perfect circles, avoiding the skin. Then your smaller cutter to remove the center.

MOP

  • Prepare cake batter according to package instructions, set aside.
  • Place dates in a bowl and cover with boiling water and allow to soften for 15 minutes before straining.
  • Blend dates with coconut milk, vanilla, salt, and cinnamon until smooth.
  • Coat the inside of a cupcake pan with avocado oil before placing a level ½ oz scoop of date caramel in the bottom of each vessel.
  • On top of the caramel, place the mini pineapple rings and fill each center with a cherry.
  • Place a red scoop of cake batter on top of each and bake at 350 until done - 12-17 minutes, depending.
