Sometimes, it can feel like a sad day when you head into an elimination diet. It can feel like all the joys of food are gone. But no! With a little creativity, you can have it all, including ice cream cones...but first some fun history.
The first recorded mention of an edible cone is in Mrs. Agnes Marshall's 1888 cookbook, where she suggested filling cones with ice cream. However, it was at the 1904 St. Louis World’s Fair that the ice cream cone gained widespread popularity. The often-cited story involves Ernest A. Hamwi, a Syrian concessionaire selling zalabia (a waffle-like pastry). When an ice cream vendor nearby ran out of dishes, Hamwi rolled his pastries into cones to help serve the ice cream.
This concept of the ice cream cone quickly caught on, leading to various patents and innovations. In 1903, Italo Marchiony, an Italian immigrant, was granted a patent for a mold to make ice cream cones. By the early 20th century, companies began mass-producing ice cream cones, making them a staple in American culture.
The waffle cone, sugar cone, and wafer cone are the most popular varieties today. Each type has evolved with unique textures and flavors, solidifying the ice cream cone's place in the dessert world as a beloved and convenient treat.
And so, yes, ice cream cones as we know them, don't tend to fall into compliance with any sort of elimination or AIP diet. This said, we got creative and had a whole lot of fun making our very own ice cream cones, all with the help of our Vegan Pancake & Waffle Mix! Here's how we did it:
