Allergy-Friendly / AIP Gingerbread Cookies

'Tis the season!  And with visions of sugar plums dancing in our heads and gingerbread men running around, it can be tough to be on a restrictive diet.  Until now!  We have a super fun and festive Gingerbread cookie recipe to share, using our Sugar Cookie Mix.  We think you will just love!

A bit about Gingerbread.  With a rich history dating back to ancient times, its origins trace back to Greece. However, it gained popularity in medieval Europe, where it was shaped into intricate designs and often used in religious ceremonies. The gingerbread man's tale, as we know it, emerged in 19th-century Germany, where bakers began creating human-shaped cookies. The story gained literary fame through the Grimm Brothers' fairy tales.  We love those tales!The iconic gingerbread man character came to life in the United States during the 19th century. Its popularity soared with the publication of the "Gingerbread Boy" story in various children's books. This spiced cookie character, known for outwitting various pursuers, has become a beloved figure in holiday traditions worldwide. Today, gingerbread remains a symbol of festive joy, with families and bakers continuing the tradition of crafting and enjoying these delicious, aromatic treats during the holiday season.  And now, you can enjoy it sans gluten, dairy, nuts, eggs and more!


5 tsps Molasses Powder

1.5 tsp Cinnamon

1 tsp Ginger

1/2 tsp Ground Cloves

1/4 cup Oil

6 TBSP Maple Syrup

2 TBSP Water




1. Preheat oven to 350F

2. Pour your eat GANGSTER Sugar Cookie Mix into a large bowl.  Add molasses powder, cinnamon, ginger and ground cloves.  Stir to combine.

3.  Add oil, water and maple syrup.  Stir to combine.

4.  Roll out on parchment paper to 1/4 inch thickness and cut into desired shapes (ie, Gingerbread Men & Women!)

5. Bake 8-10 mins.  Remove from oven.  Cool & Decorate as you wish!
