Allergy-friendly / AIP "Cookies & Cream" Ice Cream Cake

It is hard to believe an ice cream cake or pie can be AIP, but with the right tweaks, it's totally doable.  And totally worth it!

 

Directions for the crust:

Mix together one pouch of eat G.A.N.G.S.T.E.R. Carob Fudge cookie mix as directed on pouch.  Press dough into 8 inch round pie pan.  Bake 20 minutes, then remove from oven and allow to cool.  Please in freezer overnight.

 

Directions for the ice cream:

Because we like to simplify things as much as possible (like, get to enjoying it already!), we love using Fronen icecreams as the icecream filling.  They have 2 flavors that are fully AIP compliant - and a couple of others that are close!  We recommend their Vanilla flavor (please note they do use Vanilla Extract which is not AIP elimination phase).

 

Optional: If you wish to make a "Cookies & Cream" ice cream (as shown in image), use another Carob Mix pouch to make carob cookies as directed on pouch.  Then crumble and mix into a Vanilla n'ice cream of your choice!

Bringing it all together:

Once your crust is frozen, remove from freezer and fill with ice cream.  Note, its always easiest if ice cream is softened first, so don't remove the crust until the ice cream is spreadable.

Once crust is filled, decorate as you wish with cookie crumbles, fruit, coconut whipped cream and mint.  Place back in freezer to harden. 

 

When its ready, remove from freezer, slice and enjoy!
