AIP / Allergy-Friendly Apple Pie Bars

Homemade baked fruit bars are a wholesome and delicious snack that combines convenience with nutrition. These bars are a healthier alternative to store-bought options, as you control the ingredients, avoiding excessive sugars and preservatives.

Creating your fruit bars allows for endless customization. You can blend your favorite fruits, nuts, and seeds, tailoring the flavor and texture to your liking. Plus, they're a perfect way to use up overripe fruits, reducing food waste.Baking the bars at home ensures they are fresh and free of artificial additives. They make for a satisfying on-the-go snack or a guilt-free treat, packed with fiber, vitamins, and natural sweetness. 

This fall, we are of course loving all things "APPLE"!  These Apple Cinnamon Fruit Bars are great for snacking and desserting!  Here's what we did:

 

INGREDIENTS

- eat G.A.N.G.S.T.E.R. Sugar Cookie or Oatmeal Schmoatmeal Cookie Mix 

- 6-7 TBSPs Maple Syrup

- 1/4 cup Oil

- 2 TBSP Water

- 2 finely chopped & peeled Apples

- 2 tsps Cinnamon

 

INSTRUCTIONS:

1) Preheat oven to 350F

2) Mix your eat G.A.N.G.S.T.E.R. cookie mix as directed on the back of the pouch

3) Using a rectangular silicone mold, form the dough in a thin layer on the bottom and sides of each well

4) In a medium bowl, combine chopped apples and cinnamon

5) Spoon 2-3 TBSPs of the apple mixture into each cookie well, spreading to ensure even across the bar

 

6) Form the top layer of the cookie bar by rolling out and cutting dough to fit over top of each well.  Ensure this is a thin layer - 1/8 inch thickness.  Then seam the sides closed to ensure the apples are fully inside the bar.

7) Bake 13-15 minutes.  Remove from oven and allow to cool.  Enjoy!
