AIP / Allergy-Friendly Pineapple Upside Down Mug Cake

Pineapple upside-down cake, a sweet delight that oozes nostalgia, has a fascinating history. Emerging in the early 20th century, it gained popularity when canned pineapple became readily available.Around the 1920s, promotional campaigns by Dole and the Hawaiian Pineapple Company (now Dole Food Company) encouraged homemakers to use canned pineapple in various recipes, including this cake.The defining feature of this treat is its unique preparation. First, a caramelized sugar layer is created at the bottom of the cake pan, topped with pineapple rings and maraschino cherries. The cake batter is then poured over this arrangement, and after baking, it's flipped to reveal the beautiful, fruity topping.Pineapple upside-down cake became an iconic dessert during mid-century America and continues to evoke warm feelings of tradition and comfort today.  And we've got one that's as American as it gets...without the Standard American diet! :)

 

MUG CAKE INGREDIENTS:

  • 1/2 cup Cinnawin Spice Cake & Muffin Mix
  • 1.5 TBSP Coconut Oil
  • 3 TBSP Water
  • 1/8 tsp Apple Cider Vinegar
  • 1 cherry, sliced in half
  • 1 ring of fresh pineapple
  • 1 microwaveable mug or ramekin (ideally large enough bottom to fit a pineapple ring!)

 

CARAMEL SAUCE INGREDIENTS

  • 1 cup Coconut Cream
  • 3/4 cup Coconut Sugar
  • 1/8 tsp Salt

 

INSTRUCTIONS:

 

1) Prepare the Caramel Sauce.   In medium saucepan mix together coconut cream, coconut sugar and salt. Bring to a simmer, allowing all sugar to dissolve. Remove from heat. Sauce will thicken as it cools.

2) In microwaveable mug or ramekin, pour 2 TBSPs caramel sauce at the bottom.  Place the pineapple ring atop the sauce.  Place the half cherry in the middle of the pineapple ring.

3) In small bowl, mix eat G.A.N.G.S.T.E.R. Cinnawin Spice Cake & Muffin Mix together with oil, water and apple cider vinegar in the amounts described above. Stir well.

4) Pour cake mixture into the mug or ramekin, atop the pineapple ring and cherry.

 

5) Place mug or ramekin in microwave and cook on high for 60-80 seconds. Remove and allow to cool.

6) Using a knife to loosen sides, flip the cake onto a plate, so that the pineapple and ring and cherry are now on top.

6) Garnish with remaining caramel sauce, whipped coconut cream or dairy-free icecream. ENJOY!
